8 1 Handwashing sinks, supplied and accessible Yes No No 5-205.11 Maintain access to handsinks. Handsinks may only be used for handwashing.-Pf Observed a handsink with a meat hook inside. CDI-EHS moved hook and explained to PIC it needs to remain open. There are other accesbile handsinks nearby.

Observed raw quail eggs stored over RTE boiled peanuts and bamboo. CDI-PIC had a food employee seperate raw animals and EHS moved eggs to the bottom shelf. 3-302.11(A)(4) Protect food in storage using covered containers, intact wrappings, or packaging. Observed several bags of flour, baking grease, and sugar open, in the dry goods area. Needs to remain closed to inhibit pests. REPEAT.
14 3 Food-contact surfaces: cleaned and sanitized Yes Yes No 4-602.12 (A) The Food Contact surfaces of cooking and baking equipment shall be cleaned at least every 24 hours. Observed dry good measuring cups layered with old food debris (mostly spices), needs to tremain clean. Observed meat tenderizer with grease build-up. Observed 3 plastic containers in the WIC with black build-up on the sides, stored over RTE foods. CDI-PIC took all items to be washed/rinsed/sanitized. REPEAT.

PIC DM. VR REQUIRED 2/12/2021. EHS is going to make a compliance visit as well. REPEAT. PIC did not sign due to Covid protocols.

All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed roasted duck and pork ribs on a hotbox in the front, PIC said they use time for this. EHS observed no time stamp. CDI-PIC added time stamp.

Observed several stand up coolers, stand up ovens and prep units being used for dry storage. Water standing in the WIC. Rusted shelves throughout facility. Not sure if this is due to low volume or if it is because they no longer work. EHS did not deduct any points. Wok area is becoming rusted. WIF has ice building up.

Caution should be used to minimize food exposure. Kitchen is in need of a good clean. REPEAT.
