3-402.11 Must provide proof of fresh salmon for sushi as having been properly frozen for parasite destruction or aquacultrurally raised to be parasite free. Observed fresh salmon from "Hawaiian Fresh Seafood" used for sushi with no letter of guarantee available. PIC will find out from distributor and notify us, if salmon does not have proof, it must only be used for cooking and another salmon product with a letter of guarantee must be used for sushi. Will follow up to ensure Salmon in use is approved. |
