General CommentsEHS and PIC Jason discussed the Sodexo FRB Conference Center permit during inspection today. PIC stated that no food items are prepared down in that kitchen. It is only used for storage of small wares and plating/setup for catering events. EHS will send a follow up email to PIC by the end of the week regarding the permit downstairs. Facility downstairs is event based only and operates very intermittently.

Observed chicken salad and sliced tomatoes cooling in the prep top cooler. CDI: Employee relocated items to the reach in freezer and rapidly cooled them. EHS reminded PIC to ensure that staff are fully cooling foods to 41F before moving them to holding equipment.

Observed no label on the packaged Cole slaw. CDI: Cole slaw moved to the back kitchen. Observed no honeydew declared as an ingredient in the fruit cup. CDI: Honeydew added to list of ingredients on labels.
