3-304.15(A) Discard gloves after a task is complete or any time they are damaged or soiled. -P - Observed an employee crack raw shell eggs with gloves then grab a biscuit with the same gloves. CDI - stopped the employee and explained the violation. Employee discarded the biscuit and gloves and washed hands and got new gloves.
3-302.11(A) Separate raw animal foods from ready-to-eat foods. -P - Observed raw chicken and raw burgers stored above fully cooked turkey bacon in the walk in cooler. CDI - items were rearranged correctly.
3-304.11 Food shall only contact surfaces of properly cleaned and sanitized equipment and utensils. -P - Observed a water bottle stored with the ice in the ice machine. CDI - water bottle was discarded. |
