Observed products in top of “flip top 3” holding above 41F, see temperature chart. Through discussion with PIC, facility has been having issues with this particular unit freezing up, have had to order a new thermostat for the unit, scheduled to arrive this week. PIC stated that tomatoes and cheese were just cut and put directly into unit, causing products to be out of temperature. EHS found that unit was holding around 44-49F ambient temperature before adjusting. CDI- PIC adjusted machine and unit holding at proper temperature after adjustment. PIC stated adjusting dial is temporary fix, should be fully fixed with new thermostat. EHS will conduct compliance visit to ensure unit is holding temperature after repair. REPEAT. Note: points not escalated as this is a different unit experiencing cold holding issues (has fixed unit with previous issues), EHS believes facility/PIC is displaying active managerial control by taking temperatures, monitoring unit and adjusting as needed, actively working towards a fix. |
