General Comments

During inspection EHS observed DM on all TCS food items, however the dates are from prep and some were the discard dates making it unclear which they follow. PIC explained they did discard dates in 1 prep unit to make sure the food gets discarded. The discard dates extended to long and PIC knew they were supposed to be from 5/10 not 5/12. No points taken today due to the great work on actual dating food, but will follow up on next inspection to make sure dating is clear.
