General Comment: 4-601.11 (A) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils - P. All food contact surfaces shall be clean to sight and touch. Observed some deep grooves on the cutting boards. CDI- manager was notified to change/flip the cutting boards if they continue to produce deep grooves.4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness - P. All quatinary ammonia sanitizing solutions shall be concentrated between 100ppm-200ppm. Observed a spray bottle labeled "sanitizer, quat" with 0ppm quat. CDI- bottle was filled with 100ppm quat solution. |
