Unit in the corner across from the grill was holding at 54F. PIC stated all of the foods in the reach in were prepped this morning. CDI- TCS foods were placed in the walk in cooler to cool down. Maintenance was called to fix the issue during the inspection. This is the third time in a row, cold holding has been an issue. The unit not holding was also noted on the prior inspection. longterm compliance has not been met. -REPEAT -VR |

3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed TCS foods in the in the reach in cooler holding above 41F. Items were moved into the walk in cooler and covered with lids and plastic wrap. Items did not drop any degrees within 20 minutes. CDI- Lids and plastic wrap were removed actively cool TCS foods. This is the fourth time in a row this has been noted on an inspection sheet. Long term compliance has not been met. -REPEAT -VR |
