3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. - Pf. Observed inefficient cooling methods on multiple containers of diced tomatoes and lettuce due to foods being inside deep containers and in high densities with a cooling rate of 0 F after 30+ minutes. Refer to temperature observation chart. CDI - Foods were separated into smaller batches/spread across flat sheet pans and several transferred to the walk-in freezer. Temperatures began to decrease < 41 after additional 15+ minutes. Reviewed proper cooling methods with PIC and food prep present. -0.5-
