3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P For more information please visit: http://meck.co/FoodSafety or view our training videos at the following weblinks: What are TCS Foods https://youtu.be/bRvqAETDjQU and Safe Food Temperatures https://youtu.be/tXP09IK-1TQ . Cooler drawers under grill were holding TCS foods above 41F. Items had recently been placed into unit from walk-in cooler where foods are being held 41F and below. PIC believes temperature is being affected by depth of pans being used. Ambient air thermometer on side of unit was reading 35F. Small ambient air thermometer was placed in cooler drawer after TCS foods were moved uncovered back into the walk-in to quickly cool. PIC will make contact with maintenance to see if unit needs to be repaired or adjusted. Walk-in unit and prep cooler across from drawers will be used for TCS cold storage until lowboy maintains food at 41F and below. |
