REPEAT: 3-501.16(A)(2) Maintain TCS foods in cold holding at 41 F or less. - P. Observed multiple TCS foods > 41 F inside prep units station across from stove, some were placed into units as early as 10 am. Refer to temperature chart. EHS noted the smaller prep unit (flip top/lowboy station) across from hand sink was unable to maintain temperatures < 41 F. It was found that the rear ventilation was obstructed with a box. Box removed and unit ambient temperatures began to reach < 41 F at end of inspection. CDI - Items from early morning voluntarily discarded and remaining items relocated to walk-in freezer for rapid cooling to < 41 F. |
