3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed 3 - 2 inch pans of diced chicken cooling on a speed rack, sliced tomatoes, large container of tuna salad and several plastic containers of just washed spring mix cooling in the WIC. Advised PIC to stir chicken, uncover tightly wrapped tomatoes and don't stack covered spring on top of each other while cooling. Active cooling of hot foods needs to begin while food is 135F or above. PIC stated chicken is cooled outside of the WIC for 2 hours. Monitor cooling so it is not left out once it is below 135F. Also suggested a second speed rack for cooling. CDI by uncovering items, stirring items and placing some items directly in front of the WIC fans for faster cooling. |
