Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed one raw shell egg leftover from tray of eggs pulled and put on TPHC being attempted to put back into refrigeration and re-used. Any items pulled and put on TPHC may not be re-used and will have to be discarded no matter how long the item has been out of temperature. If facility wishes to keep leftover eggs then TPHC may not be used and item will have to be stored at 45F or below during service. CDI-egg discarded.
31 0.50 Proper cooling methods used; adequate equipment for temperature control Yes Yes No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed items being cooled while tightly covered such as black bean mix and coleslaw cooling from room temperature in front prep unit and cooked meat items cooling and tightly covered in walk in cooler. CDI-all pans vented and items taken to walk in cooler to cool rapidly. REPEAT.

37 0 Contamination prevented during food preparation, storage and display No No No 3-307.11 Protect food from contamination sources not specifically noted by code. Observed flip top prep unit stored directly beside hand sink without a splash guard installed. Did not observe any contamination during inspection as lid was kept closed on unit but potential for contamination from hand sink splash is present. Also observed soap dispenser installed directly above flip top unit and leaking onto top of unit which also may contaminate food below. Soap dispenser should be moved to better location away from prep unit and a splash guard installed. Points will be deducted in future inspections if any splash contamination is observed while lid is open on unit.
