4-302.13 (B) Provide an approved Max/Min thermometer for testing sanitizing temperatures in hot water warewashing machines. The thermometer must be readily accessible. -Pf. Observed no irreversible registering temperature indicator which was not provided and readily accessible for measuring the utensil surface temperature for establishments that have a hot water mechanical warewashing operation. CDI - EHS found yellow plate indicator near office printer. Food service workers had no knowledge on how or when to use. EHS educated staff on how and when to use thermometer. |
