3-501.16(A)(2) Maintain TCS foods in cold holding at 45F or less. -P Observed reach in self serve cooler holding at 51F. Food temperature was above 45F. CDI: Cooler turned down. Items had just been put in the cooler at 6am. Items were likely in temperature before based on the temperature of the cooler in the kitchen which they came out of. PIC advised to continue to observe cooler and make sure that it is holding all foods at 45F or below. |
