Observed cook line hand sink blocked by rolling cart and a pattern of this violation onsite is noted. PIC explains that the cart starts out more than a foot away, but slowly moves forward during service. EHS advised as in the previous inspection, to place permanent outline on floor to make plain where the cart should be placed, and train staff to be accountable for moving the cart back if it begins to block hand sink. PIC should consider immobilizing wheels once in place, to prevent drifting during service. CDI- Cart moved a foot away from the hand sink so it is accessible. NOTE: Due to repeat violations (third consecutive today) If this violation is present at the next inspection, risk control plan or permit action may result. This is the only cook line hand sink and must be accessible so staff are not discouraged from washing hands. (-2) 6-301.14 Post a handwash sign at each handsink. Observed no hand sink sign at back hand sink. CDI- EHS provided sign.
16 0 Food-contact surfaces: cleaned & sanitized No No No 4-602.11 (E )Clean the equipment and utensils used with nonTCS foods as required to avoid contamination. Observed dark residue at top of ice machine chute in center corridor. 21 0 Proper hot holding temperatures Yes No No 3-501.16(A)(1) Maintain TCS foods in hot holding at 135F or above. -P Observed soft cooked bacon stored at ambient temp at 80F to left of flat top. EHS discusses when bacon can be considered non-TCS (when cooked so that water activity is inhospitable to pathogens; crispy, “hard cooked”). CDI- Bacon reheated to >165F at flat top and held hot. PIC states they will hard cook bacon going forward, to render non-TCS. (-0)
22 1.50 Proper cold holding temperatures Yes Yes No REPEAT. 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed portioned cups of ranch dressing in fliptop, with the uppermost layer (4th) at 45F.
