Observed employee cooking chicken used a gloved hand to scoop raw chicken into a wok to fry. Employee then rinsed the glove at the 3-compartment sink and go back to cook the chicken. CDI - EHS asked PIC to have the employee to wash hands and change glove and explain that hands must be washed at handsink when going from working with raw to ready to eat. Employee washed hands and changed glove.

Observed egg rolls and chicken held using TPHC with no time marks. CDI - PIC stated food was brought out at 11 am when facility opened and time was marked appropriately.
