4-703.11(B) After being cleaned in a mechanical dish machine, equipment food-contact surfaces and utensils shall be sanitized in the dish machine by achieving a utensil surface temperature of 160F as measured by a max/min thermometer.-P.
Observed the high temp dish machine only able to reach 158F after 8 cycles. EHS then observed employee run a rack of dishes while at 158F. -CDI- Dish machine was eventually able to reach 161F after 2 more cycles. Dishes were passed back through the dish machine to ensure proper sanitization. (0 pts)
