1 1 PIC Present, demonstrates knowledge, & performs duties Yes No No 2-103.11(A-P) PIC shall ensure rules in the code for food safety and handling are met. -Pf Observed no active managerial control taken to prevent cold holding violations after power outage occurred before facility opened. PIC at 6:30am checked ambient temperature of cold holding units for the deli and ambient temperatures were above 41F but PIC did not take any temperatures of the foods themselves, leading to product being discarded due to lack of intervention to cool these foods within 4 hours of the units going out of temperature. PIC stated that ambient temperatures all units were 41F and below at 10:30am. CDI- PIC at time of inspection educated on what to do in cases where power outage occurs. EHS suggested to change protocol to take temperatures of the foods themselves along with ambient temperatures and to implement cooling logs to track progression of cooling. Points escalated due to severity. A Food Safety Checklist can be found at: www.mecknc.gov/foodsafety along with more food safety information related to PIC Duties, Training, and managing food safet
