3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed peppadew cheese being held above 41F in specialty cheese case. PIC provided temp log showing cheese was cooler than 41F less than 4 hours prior. CDI: PIC moved product to walk-in freezer for rapid cooling. Observed cooked ribs, boneless wings, and cole slaw being held above 41F in sub bar low case. PIC unable to provide temperature log. Post inspection, PIC provided time sheet for units defrost cycle. Unit was in defrost; however, the unit should be able to defrost without causing temperature to rise above 41F. CDI: PIC voluntarily discarded product. |
