3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed 3 different display cooler units holding TCS foods above 45. One display cooler holding ribs at 45 degrees. One display cooler holding macaroni salad, potato salad, and cole slaw at 48-49 degrees. One pan of TCS cheese and olives at olive bar observed at 44. CDI- PIC removed ribs to chill to 41 in walk in cooler and voluntarily disposed of macaroni salad, potato salad, slaw, and pan of olives all not properly cold holding. Maintenance worker came during inspection to begin servicing coolers. Will follow up that coolers are properly holding TCS foods at 41 or below. |

CDI- Non date marked chubs voluntarily disposed of by PIC. Observed pulled chicken in reach in cooler not date marked and sliced tomatoes in make table of pizza station not date marked. CDI- Chicken disposed of, tomatoes properly date marked for yesterday's prep date.
