3-501.16(A)(2) Maintain TCS foods in cold holding at 45F or less. -P Observed items in multiple prep units at temperatures greater than 45 F. Small prep unit has history of inadequate cold hold and has heavy condensation leak. Cheese only was found in this unit and was held out of temperature for ~ 2 hours. Large unit was holding foods at ~ 45 - 47 F. All foods had been in unit for less than 4 hours. Maintenance has repaired the small unit multiple times and unit will not work consistantly. I instructed manager and chef to discontinue using unit and hold cheese on ice till unit can be replaced. Maintenance was called while on site and is in route to service/repair large prep unit. Food in 1 refrigerated drawer was 45 F. Drawer gasket is torn/missing at top. Gave instruction to replace gasket ASAP. |
