3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed deli ham, turkey and chicken salad in flip top coolers missing date labels. According to the PIC date labels are written on the plastic wrap used to cover the product which gets removed for service. Advised to date label the sides of the pan to ensure this date carries over from the product coming from the labeled bulk container. CDI- advised to label since products were prepared less than 24 hours ago. |
