4-601.11 (A) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils - P Equipment shall be cleaned to sight and touch. Observed knife blades with dried food debris on them stored in clean section. Knives are stored on magnetic bar above prep sink. CDI- Knives were washed, rinsed, and sanitized. PIC will begin storing in a different area were contamination can be prevented. |
