3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P. Observed deli meat and cheese case out of cold holding temperature. Items in both deli meat and cheese case temped 46F and both cases were observed coming out of defrost mode. Outside deli cheese and meat case thermometers read 39F yet internal thermometer readings read 54F. CDI-PIC placed all items in the deli cheese and meat cases in the blast chiller and walk in cooler to rapidly cool. Meat and cheese case is not to be used until internal thermometer reading is below 41F. VR-A verification visit will be conducted within 3 days to see that all TCS items in deli meat and cheese case is maintaining 41F or below and meat and cheese case has an internal thermometer of below 41F. -REPEAT VIOLATION- |
