3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf
Observed TCS foods in prep unit improperly date marked. Precooked chicken was dated after portioning while frozen, per company SOP, but was not dated when thawed and placed into prep top. Opened hot dogs were date marked for 8 days in cold holding instead of 7. When date marking TCS foods, day of prep counts as day 1, then 6 days remain. Add 6 days to prep date to maintain compliance with 7 day date marking max.
CDI-Chicken discarded and hot dogs properly dated.
