3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed cubed potatoes and hashbrowns using TPHC. Cubed potatoes not labeled with beginning and discard times. Hashbrowns had discard time of 2 hours prior at 11AM. Also observed a tub of hashbrowns with TPHC time label of 1PM-5PM presumably from the night prior. CDI-all items discarded. Verification required to ensure facility is properly following TPHC procedures. |
