3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed three (3) raw meat items (steak, burger patties, and wrapped single servings of chorizo) in the grill side above 41F when observed. Conversation with the PIC and food employee established that these items had been prepared (thawed under running water) less than 4 hours prior and had been left within the prep top to cool while the unit top was open. Unit was observed as functioning properly and all other items within the unit were observed as having been cooled and cold holding properly. CDI - EHS rotated bins to walk in freezer to properly cool them correctively. Facility shall verify correct cooling of food items within prep top units or that they are cold holding effectively prior to placement.
