4-501.112(A)(2) Provide a minimum of 180F rinse water for sanitization when using the dish machine. -Pf Observed dish machine not registering 180F. PIC called in technician for repair but also adjusted water heater and thermolabel began turning black. Technician will still be coming out tonight to assess machine. REPEAT.
4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf Observed dried food debris on dishes and utensils throughout. CDI-taken to be rewashed. |
