3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed multiple items, including but not limited to; cut heads of lettuce in walk in cooler and prep unit, caesar salads, apple salads and tomatoes not properly cooled. Lettuce and salads were tightly covered cooing in prep units, walk in and reach in coolers. Tomatoes had not cooled to 45 F before placing on line. PIC stated items were prepped less than 2 hours ago, therefore are within the allowable 4 hour time frame. CDI- Items were palced in to walk in cooler to properly cool while vented. |
