3-203.12 Retain tag on the bag of shellstock until empty. Record date on the tag when the last shellstock from the container is used. Store tags in chronological order for 90 days. -Pf Observed prepared clams casino in bus tub container in outdoor walk in freezer with no shellstock tag. PIC elaborated that container was associated with additional prepared container in walk in freezer. CDI - Container stock was condensed to mitigate lack of additional tag. Per 3-203.11(A), shellstock should be retained in their original delivery container until they are immediately prepared for service or prepped. Limit the number of containers of prepared, raw shellstock dishes, making sure to properly date mark these containers. |

3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed one (1) bin of prepared salad in the WIC with no effective date mark. CDI - PIC delegated date marking to food employee to attach effective date mark to prepared salad. REPEAT
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed one (1) serving of cut and sliced mozzarella in salad prep underside date marked for 3/7. CDI - PIC voluntarily disposed of out of date food item.
Note: No escalation in point deduction due to considerable improvement from previous inspection. Per conversation with PIC, high turnover items, such as cut salad tomatoes or milk in kitchen cold holding areas, are date marked at the end of first day of opening, should any remainder of the item persist. The expectation is that non date mark exempt TCS item that is to be held for more than 24 hours is to be date marked, and that should any portion of such a food item remain after opening or preparation on its initial day, that it will be date marked accordingly.
