shall be maintained in good repair. Observed floor tile under dunnage rack in walk in cooler that is damaged under the weight of the rack. Need to install tile or other floor option that will not break under weight of the rack. Observed stainless steel wall covers at outside door ways to walk in coolers that are separating from wall, need repair and/or refastening.
GENERAL COMMENT: Observed buttermilk fridge at biscuit prep area struggling to maintain temperatures below 44 degrees. All TCS foods inside: cheddar cheese and buttermilk, observed border line cold at 44-45 degrees. Have cooler serviced as needed. |
