3-501.13 (A), (B), (C ) Use approved thawing methods. -Pf- *Observed - Brisket with a prep sticker stating item was prepped at 6AM. PIC stated item was removed from Freezer this morning and placed into the WIC to thaw, however, item was above 41F. PIC asked employee that prepped item what process they used. Employee stated they thawed item in ambient temperature. PIC stated that standard operating procedures are to thaw over night under refrigeration. *CDI - PIC voluntarily discarded item as it had thawed at ambient temperature for a couple of hours. |
