21 0 Proper date marking and disposition Yes No No 3-501.17 Ready-To-Eat Potentially Hazardous Food (Time/Temperature Control for Safety Food), Date MarkingProperly date mark all required foods. This should include all potentially hazardous, ready to eat foods stored for longer than 24 hours. Foods should be marked with a max 7 day hold time with day 1 being the date that it was prepared at the facility or the day that it was opened from packaging. Observed no date labels on the sliced deli meats stored inside the prep cooler. Also advised to keep track of the date that the product was removed from the freezer to store. Freezing a product, "freezes" the hold clock. Once the product is thawed the hold time will resume where it left off. For example: The shredded cheese is opened from its original packaging on day 1, on day 3 it is frozen and removed on day 5. The product would have a max of 4 days left on the hold time once thawed.
