Observed blue cheese, raw beef patties, and slaw cold holding above 41F at front prep line. Observed same items cold holding above 41F at walk in cooler. Observed onions, tomatoes, raw beef patties, lettuce, and white cheese cold holding above 41 at walk in cooler. Observed ambient temperature of walk in at 45F. Observed temperature log from this morning with walk in temperature at 36F. Observed ice build up behind fans of walk in. PIC states raw beef patties were delivered this morning at 10AM and were 35F when received. CDI, TCS foods moved from walk in cooler to walk-in freezer. PIC called in service request and technician arrived onsite during inspection. Technician states defrost mode is not working, which caused ice build up and equipment to malfunction. Technician will defrost ice build up and repair equipment by this evening. Establishment can work from freezer for tonight. EHS will return tomorrow morning to verify that walk in cooler is in good repair. Verification required. |
