Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Pf Observed sliced cheese in prep top, being held on TPHC with wrong time label. CDI PIC stated that the employee printed the wrong label. PIC corrected time label on sliced cheese. |

5-501.113(B) Keep dumpster, outside waste containers covered with tight-fitting lids or doors. Observed doors on dumpster open. PIC stated that she could not close it because the door is stuck. She has contacted waste management company. Large doors were closed and grounds around dumpster is clean. REPEAT |
