General CommentsEHS observed approximately six (6) TCS food items in mobile cooler 1 (salad bowls) and five (5) food items in mobile cooler 2 (chicken tender bowls) actively cooling. Prior to observation, EHS observed department manager properly delegating and overseeing effective cooling of items prepared within department. (Salads prepared the morning of inspection in WIC. Salads and chicken tenders in mobile units were prepared less than 20 minutes prior to observation, and, at managers request, were rotated to WIC for additional cooling. EHS observed effective managerial control over cooling within department. EHS observed TPHC written log for hot bar, with ‘fried chicken’ item added for fried chicken buckets held at hot display island. EHS advises that if items at hot display are to be held on TPHC, that they are labeled accordingly (I.E. ‘fried chicken (buckets)’) in TPHC log.
