3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed some issues with the automatic labeling system used for date marking. Example: a whipped butter product was stored frozen in walk in freezer but there was no indication of when the labeled product was frozen. Make-date was less than 4 days ago so item was not discarded. Example: small amount of cooked prime rib from last night was labeled with automatic labeler for today when in fact it was prepared yesterday and labeled today after it had cooled overnight. Again, items was not expired. CDI - discussion had with PIC about how to add information to the labels so that accurate dates for expiration can be observed. |
