Cold air must flow around product to remove the heat. -Pf Observed chicken stock cooling in to great of volume and crayfish cooling tightly covered. CDI crayfish vented and stock put in ice bath and both products achieved proper cooling. Gumbo cooled from last night in reach in tighlty covered could not be saved and was discarded. |
