3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed baked beans cooling in single use aluminum pans that are covered with Saran Wrap and aluminum foil. PIC states can of beans were taken from warehouse then placed at walk in cooler for use tomorrow. CDI, food uncovered. EHS suggested uncovering foods until cool or store cans at cooler prior to use to reduce cooling time. |
