Food must be to 41F within 4 hours. -P Observed cut tomatoes and cut lettuce in prep cooler at 43F; must be put into walk-in cooler to properly cool to 41F or below prior to placing into prep cooler. Prep cooler is not a cooling unit but is rather a holding unit. CDI by removing items to properly cool. |

6-501.111 Keep the premises free of insects, rodents, and other pests. Observed several fly traps in drying area near clean containers. Saw numerous small flies on these traps. Need to clean floor drains at least weekly and dispose of unnecessary papers and other items. Slime in floor drains is excellent place for fly breeding. Most fly traps are not intended to indoor use where people occupy; fly traps removed for the most part; need to remove 2 more. Read directions and use/do not use accordingly. |
