3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed fruit salad cups containing melon cooling while tightly wrapped in a deep box in the walk in cooler. CDI: PIC laid cups out flat and placed ice packs on items. Product cooled appropriately based on rate. Observed hotel pan of salad cooling while tightly wrapped in the walk in cooler. Product was at 45F. Product was leaving facility in 15 min for a catering order. CDI: Item was made approximately 2 hours prior and would be served within the next hour. PIC added ice to the top of the product to rapidly cool the item during travel. Item was taken in an insulated bag that had been kept in the walk in cooler. EHS and PIC discussed proper cooling methods of items and that the ambient air can greatly affect items during prep. It is necessary to make sure that product is 41F and below before wrapping it tightly. EHS suggests preparing item first thing, and then placing it uncovered in the walk in cooler to cool until it must be taken for delivery. |
