4-602.11 Equipment Food-Contact Surfaces and Utensils - Frequency (C) - Ice machine bin observed with very minor buildup starting on walls and on sides of waterfall, can be wiped with sanitizer cloth more frequently (be sure not to directly spray sanitizer into machine). Equipment such as ice bins and enclosed components of equipment such as ice makers shall be cleaned at a frequency necessary to preclude accumulation of soil or microbial growth.
General Comment: quat sanitizer at 3comp sink tested at low end of required concentration today; after changing out container, sanitizer still at lower end. Be sure to keep an eye on this and have it turned up very slightly if it tests below 150ppm, per manufacturer's instructions. |
