4-903.11 (A) and (C) Equipment, Utensils, Linens and Single-Service and Single-Use Articles - Storing (C) - Observed a couple stacks of single service to go trays stored right side up on the line. Single service items shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. Noted lunch time was starting soon, practice leaving these inverted until ready to pull/use. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) - Walk-in freezer shelving on left side beginning to show signs of rusting, very minor at the moment. Observed ice buildup in reach-in freezer from defrost drips, noted a container has been placed in here to catch ice and protect food stored in here. Equipment shall be maintained in good repair and at proper adjustment. |
