General CommentsDiscussed TPHC procedure with PIC, and discussed that for cold items that are prepped day of (cut lettuce, salads, sandwiches, etc.) that are intended to be held using TPHC, time should start when the ingredients are removed from refrigeration unless items are cooled to 41F prior to beginning TPHC. Observed at 157F today during active warewashing. Per discussion with PIC, they have determined that if mop sink or sprayer at 3 comp sink is turned on, hot water is diverted and not enough is reaching dish machine. CDI- 3 comp sink sprayer was turned off and machine was restarted, and wash water was observed at 166F. Make sure to address this if wash water is observed too low.
