4-501.110 Mechanical Warewashing Equipment, Wash Solution Temperature (Pf) Wash solution temperatures in single tank, dual temperature conveyor machines shall be maintained at 160F or above. Observed at 157F today during active warewashing. Per discussion with PIC, they have determined that if mop sink or sprayer at 3 comp sink is turned on, hot water is diverted and not enough is reaching dish machine. CDI- 3 comp sink sprayer was turned off and machine was restarted, and wash water was observed at 166F. Make sure to address this if wash water is observed too low. |
