Observed cheese sauce at 121-135F in steam table/hot box. These items are listed as held on TPHC with proper procedures available, and were observed to be marked with a discard time. PIC stated these items reached proper temperature after reheating (1 hr prior) and these temperatures were observed to be recorded. Make sure to stir/mix foods when taking reheating temperatures to ensure that items reach 135F required reheat temp for initial commercial reheats.
