6-202.15 Outer Openings, Protected (C) - Glass screen door leading outside in dinging area needs weather stripping repair (big door propped open today); gaps large enough for pests observed at bottom and side area under handle, as well as square gap at top corner where cobwebs are building up. Outer openings of a food establishment shall be protected against the entry of insects and rodents by closed, tight-fitting windows, solid, self-closing, tight-fitting doors, and filling or closing holes and other gaps along floors, walls, and ceilings. Note kitchen is an open design through to dining area, with large front kitchen window that does not close, and door is typically propped open to kitchen during service. |

3-305.14 Food Preparation (C) - Noticed that plastic wrap over hot food containers is torn down middle to open for service; plastic wrap piece observed starting to tear off, may end up in food as physical contaminant. During preparation, unpackaged food shall be protected from environmental sources of contamination. Suggest removing plastic wrap from sides of container instead of tearing into it down the middle to prevent pieces possibly contaminating dishes. |
