Establishment recently got a new dish machine; noted chlorine at 25ppm, meeting current NC Food Code regulations, however manufacturer data plate says machine should run at 50ppm minimum, suggest having technician turn up concentration slightly. 21. Remember to stir mashed potato often if it will be double panned, since heat will have a harder time circulating in this thick food item. Borderline low in temp today.
