3-203.12(C) Shellstock, Maintaining Identification (Pf) - Observed no tag with batch of fresh mussels in walk-in container. Observed shellstock tags stored out of order in office. Shellstock tags or labels shall remain attached to the container in which the shellstock are received until the container is empty. The identity of the source of shellstock that are sold or served shall be maintained by using an approved record keeping system that keeps the tags or labels in chronological order correlated to the date that is recorded on the tag or label. CDI by placing tags in chronological order and keeping future tags with correlating batch of shellstock until empty.
*Remember that the and different batches of shellstock cannot be comingled. If shellstock are removed from its original tagged or labeled container, there must be a way to tell different batches apart, if more than one is stocked in establishment. |
