3-501.19 Time as a Public Health Control (P) (Pf)-TPHC is being used for items on serving line including ACP & pork patties. EHS did not observe ACP during inspection today, but pork patties were on the serving line. Recording of time for TPHC is in compliance; however these items are missing from the list of items that TPHC is being used for. Add both items to written procedure list & any other items that are planned for use with this method for remainder of school year. |

4-502.11 (A) and (C) Good Repair and Calibration-Utensils and Temperature and Pressure Measuring Devices (C)-Water temp. measuring devices shall be in good repair and accurate within the intended range of use. Wash temperature gauge on dishmachine is staying between 100-120F. Water temperatures taken were 147-150F. Repair temperature gauge so that wash water temperature can be accurately evaluated and checked. |
