4-601.11 (A) Equipment, Food-Contact Surfaces, Nonfood Contact Surfaces, and Utensils (Pf)-Slicer downstairs was stored with buildup in several areas behind the blade. PIC reported that slicer was used this morning (by pool grill staff) but thought it was clean Wash, rinse, and sanitize thoroughly before storing these. CDI by education and cleaning. Make sure to train other staff to clean the slicer or make sure to check behind them. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) Address few chipped/rusted gold shelves in upstairs walkin. Continue to monitor ice buildup in a few areas of walkin cooler & freezer.
PIC emailed EHS during inspection spec sheet for proposed new island upstairs. Currently salad prep cooler & main prep cooler are not in use, awaiting replacement equipment with island. Repeat.
